My guest today, Jeanne Hardt, has a tagline for her book, From the Ashes of Atlanta, that makes my toes curl and sounds as delicious as peanut butter pie!

I love anything peanut butter and have been known to sneak a spoonful on it’s own (don’t judge- there’s no double dipping!) But put it in a sandwich, on a cracker, throw in a dollop to make a ‘healthy shake’ pop or pair with chocolate in any way and bam! Pure awesomeness!
So putting it into a chocolate pie crust…well, need I say more?. When they’re joined to make peanut buter pie I’m generally speechless as well because I’m busy packing my face with this little piece of heaven.

Peanut Butter Pie
1 Chocolate pie crust                   1 t butter (softened)
1 8oz cream cheese (softened) Â Â Â Â Â Â Â Â Â Â 1 t vanilla
1 cup peanut butter                     1 12oz Cool Whip
1 c sugar
Beat cream cheese, peanut butter, sugar and butter until smooth in a mixing bowl. Add vanilla and mix well. Fold in 1/2 to 3/4 of the container of Cool Whip. Spoon into crust and spread remaining Cool Whip on top. Refrigerate.
